Roselle Tea

Ingredients

  • Roselle flowers
  • Hawthorn berries
  • Dried tangerine peel
  • Smoked plums (Prunes can be substituted)
  • Rock sugar / Honey
  • Salt (Roselle : Hawthorn : Tangerine peel : Smoked plum ratio is 5:1)

Instructions

  1. Bring water to a boil (Roselle to water ratio is approximately 1:10).
  2. After the water boils, add hawthorn berries, dried tangerine peel, and smoked plums. Continue boiling until fragrant, about 5-10 minutes.
  3. Add the roselle flowers and continue to boil for about 10 minutes. Turn off the heat, cover the pot, and let it steep for about 5-10 minutes.
  4. Remove the softened roselle flowers. Add rock sugar or honey to taste. A small amount of salt can be added to enhance the sweetness (sugar to salt ratio is approximately 5:1).
  5. Stir well to ensure the sugar dissolves. Remove the ingredients and seeds before drinking.

Roselle Jam

Ingredients

  • 450g fresh roselle fruit
  • 150g roselle residue (from the tea)
  • 100g rock sugar
  • 150g maltose
  • 1 lemon, zest
  • 20g lemon juice
  • 250g water

Instructions

  1. Remove the seeds from the roselle flowers, keeping the calyxes and petals. Wash several times with clean water.
  2. Place the washed roselle flowers and roselle residue in a juicer. Add water and blend until crushed.
  3. In a pot, pour in all the crushed roselle flowers, rock sugar, maltose, lemon zest, and lemon juice. Bring to a boil over medium heat.
  4. Reduce to low heat and cook for about 35 minutes until the rock sugar melts. Stir frequently to prevent burning at the bottom.
  5. Once cooled, pour into clean jars, seal, and refrigerate. (Can be refrigerated for several months)
